I am just starting to find some worthy dessert recipes that are Gluten and Egg free and taste amazing and this recipe is at the top of my list today. The crust reminds me of “Aussie Bites”, found in Costco and the filling is a mild pumpkin pie and delicious!!! I was ready to keep sampling before I put it in the crust. YUM!!!! The surprise with this dish is, it’s a frozen dessert. It takes up to 5 hours in your freezer before slicing and serving so this is a dish you prepare the day ahead or early on in the day. Another bonus with this recipe is, no sugar. Maple syrup is the sweetener. It also qualifies as vegan friendly. For a beautiful to look at and uniquely delicious dessert, the prep time is pretty short with just a few preps ahead of time, (soaking your cashews) This would be fun to take to a Holiday occasion or family dinner and if you are lucky enough to have a small dinner party, you might have a leftover slice or two. Just wrap any extra slices and keep them in your freezer. Bet they won’t last in there very long!!!
There is no settling for a less than delicious taste with this dessert. Fortunately, I am discovering more recipes that are loved by all members of my family: vegan, Gluten and Egg free, watching sugar, wanting more sugar…you get the picture. I think this could become a family favorite and staple in the dessert column.
