
Yep.. that’s what I said…Black Bean Brownies…. I wish I could have you taste these before you had to have an opinion cause I know the black bean part is throwing you off and it shouldn’t…they are yummy!!!! This is an easy dessert to throw together and there are no eggs, no flour, no dairy and only coconut sugar (so no processed sugar) . I kept reading the recipe knowing I was missing a key ingredient..no flour??? I used a parchment paper sling in my 8X8 pan. It made getting them out, and looking nice ,so much easier. Just trim your 2 sheets of parchment paper the width of your pan with extra hanging over to grab with. Put them in opposite directions in the pan. After baking, the brownies must sit for at least 10-15 minutes before lifting out of the pan and cutting (I used a pizza cutter) . Need a chocolate, healthy fix? This is it!!!
preheat oven to 350… prepare your 8x’8 pan with parchment sling (I also sprayed my parchment paper lightly with PAM)
IN YOUR FOOD PROCESSOR:
COMBINE:
1 15 oz.can of drained and rinsed black beans
2/3 c. peanut butter or almond butter
2 TBL. coco powder
1/2 c. coconut sugar
1 tsp. baking powder
Process the above till smooth… stopping a couple of times to scrape the sides….Remove the blade and add; 1/2-3/4 c. dairy free chocolate chips…Mix till combined with thick batter
** The batter is very very thick and sticks together quite well.
ADD the batter to prepared pan and push into corners to level the batter. I used a knife to lightly pull across the top to look like a more normal brownie top.
Bake for 20-25 minutes. (toothpick will come out clean when done)
Cool for 15 minutes before lifting from pan and cutting.
***** If you make these brownies, think small portion and paired with a hot beverage. I cut each one of these squares into 4th’s and freeze them. When I need a chocolate hit.. I have one tiny square with coffee and it’s perfect!! They are NOT sweet.. they are chocolatey and dense so a little actually works!!! Are they as decadent as a brownie made with processed sugar, eggs, and butter??? NO.. but they are also 1/8 the calories and do the job of helping with a chocolate craving. (They also have oodles of nutritional value with the black beans, flax seed and dark chocolate)
