With a little planning and early in the week prep, you can have some quick grabs and they can be delicious, healthy and satisfying. my daughter left a container of Jerked Black beans and rice. I think she picked it up because it said gluten free, but, she left me a gem!!! I cooked this per the instructions on the container (only 20 minutes) and then added my seasoned tofu and tempeh, a little sweet red chili sauce and voila…. a wonderful dinner!! It could be well worth your while to have some seasoned tofu and tempeh in your frig. they are a soy protein source that easily replaces meat. You could add shrimp or chicken to this dish as well.
