
This is a family favorite and there are never enough leftovers when you take it to a family gathering. The first time I saw this dish, it was a school pot-luck lunch in the Staff lunch room. I was not crazy about broccoli so decided to by-pass until a co-worker said..try it!! It was the first time I LOVED BROCCOLI!! It is easy to throw together and pretty to look at with the bright green and red craisins. This recipe can be adapted to fit special needs dietary issues as well. OR, if you have no dietary issues: ADD BACON !!!
6 cups of Broccoli (chopped up to slightly smaller than bite size pieces)
2 slices of onion
½ c. sunflower seeds
½ c. craisins
Mix together and pour over broccoli:
1 c. real mayo (not miracle whip)
¼ c. sugar
2 tsp. Vinegar ( I actually use 2 TBL. of vinegar… like it even more!)
TOSS to blend….
*Chill and toss again before serving
Variations:
Add bacon crumbles
Substitute Vegan Mayo for real mayo (I do this and it’s delicious!! It separates a little more
Than real mayo but stirring it brings it right back)
I have used salad toppers (pecans and pepita seeds and craisins) instead of sunflower seeds
(whatever is in the pantry )
