
All I can say is WOW!!!! I was in Florida with my brother and sister of my heart and we stopped in at a fabulous little restaurant that was dog friendly and their outside area was like a park. I have been eating a little meat in the past couple of months, following surgery, to increase my protein and therefore my healing. This dish was on the menu and I was up for an adventure and I am hooked. Even going back to more vegan options, this meal will make an appearance at least a couple times a year. DELICIOUS!!!!! My neighbor happened to be born in Belgium and his mother made this dish almost on a weekly basis. They are my guinea pigs next week to see if it matches up to Mom. 🙂 Fingers Crossed!! This dish can be served with bread, potatoes and the favorite, seasoned fries. (I used Arby’s seasoned curly fries) Carbonnade is filled with flavor and with an instapot or crock pot, easy to make. SEASON AND BROWN : *Coat the meat and then fry in 1 TBL. butter till beef is well browned.. Remove meat and set aside
2.5 lbs. chuck or stewing beef cut into 2 ” cubes
1/3 c. flour
1/4 tsp salt
1/8 tsp pepper
SKILLET:
4 slices of thick bacon. finely chopped (cook till crispy)
ADD:
4 cloves garlic, minced
2 TBL. butter
3 large yellow onions, finely chopped
*Reduce heat and cook slowly until onions are well-caramelized..35-45 minutes.
ADD:
1 c. dark Belgian beer..deglaze any stuck on bits. increase heat and simmer until liquid is reduced by 1/4.
TRANSFER:
Transfer contents of skillet, beef and below ingredients to an insta pot or crock pot. *cook on hi (instapot) 45 minutes, slow release or (crock pot) 6-7 hours ** After it is cooked, adjust your seasonings to your taste. You may need a tiny bit more salt or brown sugar or vinegar. Think small increments!!!!!
ADD:
2 c. beef stock
2 TBL. brown sugar
3 TBL. apple cider vinegar
1/2 tsp. thyme
2 tsp. Parsley
1 bay leaf
1/4 tsp. salt
SERVE:
Garnish with fresh minced parsley and serve with bread, potatoes or seasoned fries
