
As a little girl, I called this “Kitchen Cacciatore”and it was a family favorite. Traditionally, this dish is served with a pasta, spaghetti, fettuccine or linguini. My Mom always paired it with corn and boiled parsley and buttered potatoes. I put the yummy sauce over everything!!! This is an easy dish to put together and you probably have all the ingredients on hand. BONUS!! It’s a fun dish to take to neighbors recovering from surgery because it’s different. Your home will smell divine as it cooks so be prepared for all family members to gather around the table and ready to eat ASAP.
Line your 9X13 casserole dish with the boneless, skinless pieces of chicken of your choice
SAUCE
1 onion chopped and cook till translucent ( 2 TBL. olive oil)
2 cloves garlic, minced
ADD
2 TBL. brown sugar
1 tsp. salt
1 tsp. dry mustard
1/2 tsp. chili powder
1/8 tsp. cayenne pepper
1/4 c. vinegar
1/4 c. catsup
1 can tomato paste
3/4 c. water
Pour sauce over chicken, cover and bake at 350 for 1 hour. Uncover and bake an additional 12 minutes.

caveat: don’t forget to clean out the sauce pan with some bread!!! Oh my!!!!!

THIS IS WHAT IT LOOKS LIKE COMING OUT OF YOUR OVEN. You’ll have plenty of sauce to put over a pasta or potatoes.
