I am seeing bowls everywhere I look and decided, today is the day I start the bowl journey. First of all, they look amazing! The presentation is perfect. Each person can add or delete what they want in their bowl and it looks appetizing. That is half the battle! We had a couple of cucumbers to use which made this an easy place to start. You can substitute TOFU for the chicken. Just press the block to get rid of extra moisture and cut into cubes. Then, treat is just like the chicken. Also, Dairy Free yogurt can replace regular yogurt and we eliminated the cheese without loosing out on a wonderful dish. One could substitute a Dairy free cheese option but don’t be afraid to leave the cheese out. You won’t miss it!! (If you are watching calories, this also helps with that!!) This recipe makes a lot of dressing!! We could have double the other cut up options and still had plenty of dressing. (My son-in-law, an avid cucumber dissident, had everything in his bowl, except the cubed cucumbers and did the dressing and loved it!!! Don’t tell him there were grated cucumbers in the dressing!!! SHHHH!!!!!). To make this a little easier: while marinating your chicken. cut up your veggies, make rice and dressing. This made a perfect summer meal. Give it a try!!!
CHOP UP AND PUT ITO DIFFERENT BOWLS:
1 c. cherry (grape) tomatoes
1/4 c. chopped red onion
1/3 c. kalamata olives (I’d use 1/2 c. next time. I love Kalamata olives!)
1/2 c. feta cheese
1 1/2 c. cubed cucumber (peeled)
COAT (with batter) AND FRY CHICKEN (TOFU) in one tbl. olive oil. (This is even better if you let the chicken marinate in the batter for at least 30 minutes before frying). After this is cooked, place the chicken in a bowl and it becomes another option for your bowl.
BATTER
1/2 tsp ground cumin
1/2 c. greek yogurt
2 cloves of minced garlic
1/2 tsp. salt
1/2 tsp black pepper
1/2 tsp. smoked paprika
DRESSING
1 1/2 c. greek yogurt
1/2 c. grated, peeled cucumber
1/2 tsp salt
1/2 tsp. pepper
4 TBL. fresh lemon juice
1 1/2 tsp. oregano
1 minced garlic clove
2 TBL. flat leaf parsley
1 TBL. dill weed
1/2 tsp. ground coriander
BROWN RICE OR RICE OF CHOICE
Make 2 cups ( I would use my rice maker and put in 2 cups of water and 1 cup of rice)
PRESENTATION
EVERYONE GETS A BOWL… put a nice scoop of rice into the center of the bowl… arrange your favorite options around the edge of the rice and top this with dressing. Everyone mixes their own so the flavors blend and wait for the yums to begin.
