MARINADE: Marinate for at least 2 hours
1/4 c. orange juice
1 1/2 Tbl. cornstarch
4 Chicken Breasts (chopped into 1 inch cubes)
SET ASIDE:
1 c. chicken broth
1 1/2 Tbl soy sauce
IN A SKILLET:
1 TBL. olive oil
1 clove garlic, minced
1 1/2 tsp. fresh ginger
ADD:
Chicken…. cook for 3 minutes
ADD:
Veggies and cook for another 5-8 minutes
1 1/2 c. snow peas
1 red pepper
3/4 c. green onions, chopped
1 c. broccoli
1 large carrot cut into match sticks
STIR IN:
The broth mixture, heat thoroughly
SERVE OVER RICE
