
I had this wonderful salad at my friend Judy’s house. It was delicious and reminded me that all salads do not have to be made up from lettuce. My Mom used to make a cucumber and onion salad just by marinating those two items in vinegar and water with some salt and pepper thrown in. My Mother-in-law made the same salad but drained the marinade and added sour cream to the veggies. Both of these were wonderful. I really liked the touch of sweetness that Judy’s version added and the tomatoes popped some color as well as flavor.
Marinade:
1 c. water
1/2 c. distilled white vinegar
1/4 c. olive oil. (or vegetable oil)
1 tsp. salt
1 tsp. pepper
ADD TO THE MARINADE:
3 cucumbers (I like to stripe peel my cucumbers for a little more color and take out the seeded middle or start with an English cucumber) slice them 1/4 inch thick
3 tomatoes…wedges
1 onion…sliced into thin rings
Refrigerate for a couple of hours to blend flavors. This is even better the next day!!
