I thought I might be the only person in the world that loved split pea soup, but, after going to an all-guy lunch with my husband and learning the special soup of the day was split pea, I learned there are many split pea soup lovers out there… Really? Every hand went up with Ooo’s and Ahhh’s to go along with the hands! With the use of an instant pot, you can make split pea from scratch in minutes and have it for lunch or a quick dinner. (You can do it in the crock pot too and it’s delicious. It just takes all day!!! )
Turn you instant pot ON.. set to sear or sauté add:
2 Tbl. olive oil
1 medium chopped onion
1 large or 2 medium sliced carrots
2 cloves of garlic (I love the squeezable minced garlic when I’m in a hurry. Of course, regular fresh garlic will always be the BEST but the squeezable one is pretty darn good in a soup that cooks and flavors blend.)
Sauté for about 5-7 minutes then add:
1 carton of veggie broth
4 cups of water
2 c. of split peas
1 tsp each of salt and pepper
Pressure cook these ingredients for 28 minutes and allow it to release steam slowly. Then add:
Meat of choice….Ham cubes or a plant based meat like Tofurky Italian sausage. Some peas come with a ham seasoning packet. If you use this, this is the time to add but I would add a tiny bit at a time. It’s very salty.
adjust your salt and pepper, if needed.
