What could be more fun than to have your granddaughter ask to come over and experiment making smoothies for the upcoming hot summer months? Can’t think of one single thing!!! Kennedy and I decided what ingredients we would like to start with in our smoothies and the only thing we had to run to the grocery store for was coconut water and pineapple. Everything else we had on hand. (that’s the beginning of a great recipe!!)
Our first smoothie: ”Morning Glory smoothie” on page 66 of Oh SHE GLOWS COOKBOOK
We followed the recipe exactly. Grandfather said it was “Dandy”….Kennedy thought it was too orangey and I liked it. To be honest, I was surprised how creamy this was with no milk of any kind. On our second attempt, we doubled the coconut water and left out the OJ. Kennedy kept saying, “OH, this is GOOD!!!!” I liked both versions. Ice cubes are not needed if using frozen fruits.
2nd smoothie: “Tropical beauty green monster” page 67
This blended beautifully, did not use ice cubes since our mango was frozen. We added 1 tsp of pure maple syrup and this was my favorite!!!!!! Kennedy did not like the color of this one but it made me feel even healthier as I sipped my way through it. Grandpa said ok but liked the first one better. (A man of few words)
3rd smoothie: This was “our” version of what we liked about the other 3 smoothies.
¼ cup pineapple
½ frozen banana
¼ cup frozen strawberries
½ cup coconut water
1/8 tsp. vanilla extract
½ tsp maple syrup
We cut the recipes in half for our experiment so we could sample many versions. “OUR” version is only half a recipe. I used an OSTER Bullet to blend our smoothies. (I do not have a big blender) Our biggest surprise was how much we liked coconut water and how creamy our smoothies were without any milk product. Kennedy said she’s adding coconut water to her mom’s grocery list. I know I will have it in my frig at all times going forward. Who knew??????
