We normally call something that looks like this a “cheesy thing”. Our kids and our grandchildren have and are growing up on “cheesy things”. They consist of a flour tortilla and shredded cheese and can be cooked in a micro wave or in a skillet. The micro wave is a softer version of the skillet crispy version. I have been nibbling left over “cheesy things” my entire adult life and they are not just for kids!!! Recently, I found this slightly more adult version of a “cheesy thing” and I love it!!! (Not nearly as kid friendly, but definitely more of a meal than a snack) There is a new item in the grocery that can be a time saver….guacamole in a tube. You will always have it on hand and don’t have to worry about avocadoes that aren’t ripe enough or too ripe. This is my new friend!!!! Give it a try!!!
CHOP AND DICE:
1 red onion ( a couple of thin slices and mince the rest)
2 Roma tomatoes
1/4 oz. cilantro
1 poblano pepper
Quarter 1 lime
SALSA:
mix minced onions, 1/2 of the tomatoes, 1/2 of the cilantro and the juice from 2 wedges of lime. Season with salt and pepper
SOUTHWEST CREAM:
2 TBL. sour cream
1/4 tsp taco seasoning mix
season with salt and pepper …add 1-2 tsp. of water for a drizzle consistency
SKILLET:
drizzle of olive oil, over a medium heat, add: poblano pepper, sliced onions and a pinch of salt. cook for 7-8 minutes. Stir in remaining tomatoes and 2 3/4 tsp. of taco seasoning mix and 2 TBL. water. Remove from heat and add: 2 TBL sour cream, remaining cilantro and salt and pepper.
ASSEMBLE:
Sprinkle 1/2 flour tortilla with Mexican Cheese…Top with veggie filling..sprinkle pepper jack cheese…fold tortillas in half to create the quesadillas. Place quesadillas in a skillet over medium heat (drizzle of olive oil) and cook 2-4 minutes each side. (cheese is melted)
SERVE:
Cut the quesadillas into wedges and top with guacamole and salsa. Drizzle Southwest crema and garnish with lime wedge.
