Talk about comfort food….almost as good as macaroni and cheese from your younger days. This is a dish that comes after a long day at work or school and time is limited and you’re just hungry and need FOOD!! It’s fairly bland so kid friendly and can be jazzed up with ease if you like a little more spice. The original recipe calls for ground turkey but a wonderful alternative for vegans is: meat crumbles made from plants. (Most groceries carry this now and I have found it in the produce section with dairy free cheeses or in another freezer section devoted to plant based meats.) By the way, these meat crumbles work in tacos and spaghetti sauce and any other dish that calls for ground meat and.. it’s already browned and ready to go. It’s my favorite find of the summer!!!!!!
BROWN:
2 Tbl coconut oil
1 lb. ground turkey (or meat alternative)
1 onion…chopped
1-2 minced garlic (if you like garlic.. go for 2!!)
ADD:
1 red pepper, chopped
2 medium sweet potatoes, chopped into bite size pieces
Cover with 1 cup water …bring to a boil.. cover with lid and let simmer 20-25 minutes (till potatoes are soft)
