This was a staple in our home growing up. I would tweak this with “Impossible meat” or 2-3 Beyond burger patties chopped up and browned. It feeds a family of 5 and even my picky brothers loved it. My daughters also grew up on this dish so it transcends the generations.
CHEESEY MASHED POTATOES FOR THE TOP:
Boil 5 potatoes (chopped) till tender… drain and mash with 1/2 c. milk and as much cheese as you’d like. We used 1/4 block of velvetta (cubed) but I have also used 2. c. shredded cheddar cheese. You may have to add a touch more milk but you’re looking for a rather firm mashed potato so don’t make them soupy. ( I use almond milk and Dairy free cheese… Chao is a wonderful option and Simple Truth shredded cheddar. the D.F. cheeses take a little time to adjust to.. just FYI)
IN A SKILET: Brown until the onion is translucent
1 onion, chopped
1 lb. ground beef (or meat alternative)
1/2 tsp salt
1/4 tsp pepper
ADD
1 can condensed tomato soup
1/2 c. water
1 can green beans (drained)
ASSEMBLE:
In a greased casserole dish, add the meat/vegetable mixture and top with mashed potatoes. Bake at 350 for 35-40 minutes.
