HUMMUS

OH MY GOODNESS!!!!!!! This is my new favorite go-to and it’s easy. Do you have a food processor? You can whip this up in minutes and lasts in your frig for up to 2 weeks. It can be served with crackers or veggies or even a yummy bread. It is Gluten free (unless you do the crackers and Bread thing) and high in protein. I used sweet potato crackers and they are gluten free. 🙂

Throw everything into the food processor:

2 cans of drained and rinsed chickpeas (Garbanzo beans) Save the liquid from one can to get the right consistency you like for Hummus.

1 large clove garlic, minced

1/3 c. Tahini

1/4 c. fresh lemon juice

1 tsp. sea salt

5-10 drops of hot sauce ( or 20 if you’re like me and like kick!!) * I even added 1/2 tsp of red pepper flakes…Ahhhh Perfection!!

Blend away until it’s smooth. Add 1/2 can of reserved juice from beans to start and then add 1 Tbl. at a time to desired consistency. Garnish with paprika or parsley flakes or a little Olive oil OR just go for it as is. This makes a lot and is about 1/2 the cost of premade hummus. This is a staple in my frig and my favorite grab with carrots and celery if dinner time is still over an hour away. (I admit I add a drizzle of sriracha sauce to my serving and if you like spice, I highly recommend it! )
