Whatever it is, it is not vegan or low calorie but it is a delicious comfort food. My nephew and his wife shared this favorite family dinner from her side of the family. They called it Broccoli Cheese Soup but I ate mine with a couple of crackers as a dip. Hmmmmm.. Very Interesting!!!!! If you are just needing something new to try this might fit the bill. I will tell you that their son loved it and the other kids liked it enough we didn’t have to break out the hot dogs or chicken fingers. I will probably play with tweaking some things to make it a little healthier and more in line with my vegan needs. I’ll amend this recipe later when I find the perfect tweak.
1 medium chopped onion
1/2 c. butter
6 c. chicken broth
2 (10 oz.) packages of frozen chipped broccoli
1 pkg. of fine egg noodles (very teeny!! I have never seen these or tasted these before.. YUM!)
1 (16 OZ.) loaf of Velveeta cheese
1 pint of half and half
garlic powder to taste (start with 1/2 tsp)
Directions:
- Melt butter in a large pot and sauté onion
- Add chicken broth and bring to a boil
- Add chopped broccoli and oil for 5 minutes
- Add remaining ingredients and cook on low for at least 2 hours (may have to add some more chicken broth to thin it out to desired consistency)
Our dinner was served more as a casserole and it was thick enough to stick on a cracker. This is a versatile dish!! I am not going to rate this recipe because it doesn’t fall into my guidelines for vegan but I know there are non-vegans out there that might really like this recipe…so…. Enjoy!!!!!
