Prepare quinoa:
2 cups of water
1 cup of quinoa (I like the tri-color for added color)
- I use one veggie bouillon cube in my water
Cook till water is absorbed (about 7 minutes.. Or cook for 5 minutes then cover and let it sit till water is absorbed) Remove from the stove and allow to cool.
In a bowl:
1 can black beans (drained and rinsed)
2 mangos chopped up (or you can use frozen mango chunks and chop a little) I also love pineapple in place of mango.
1 red pepper chopped
4 green onions (include the white and green)
In a blender:
Juice of 3 limes
½ jalapeno pepper (chopped up a little)
¾ Tsp. cumin
1 Tsp. salt
½ c. oil (I use olive oil)
When quinoa has cooled: Mix all ingredients together and enjoy! This can be stored in the fridge forseveral days.
I love this as a side salad and the inside of a wrap. It’s colorful and refreshing and soooooo good!!! There might be a few things you would need to put this together, but all the ingredients are easily found in the grocery. This is a crowd pleaser, in the adult world, and I rarely have leftovers if I take it to a gathering. I have this as a go-to in my fridge through-out the summer.
