LEMON NAPOLEAN

This is an easy, delightful, company worthy dessert that brings everyone back for seconds. I love the tangy taste of lemon and when we lived in Arizona, with a lemon tree just outside my back door, I scoured for recipes using lemon. In my opinion, there is nothing better than fresh lemon to enhance anything you are making. If the recipe calls for lemon, use a fresh lemon! You can make this a little easier by using prepared whip cream or make it vegan friendly by using dairy free whip cream. I personally, use the D.F. whip cream and I even use it when I have company coming that are not a vegan crowd. I didn’t know what lemon curd was and had to ask where to find it in a grocery store. It is with the jellies. Who knew? This is 100% worth trying!! (If you have any left overs, keep the cream mixture separate and refrigerate. the rectangles should remain on the counter, lightly covered. )

You will need:

2 sheets of puff pastry, thawed

1/2 c. heavy cream. (or Dairy free whipped cream)

1/2 c. lemon curd (or make your own if you can’t find it!)

1 Tbl. powdered sugar

1/2 tsp. lemon juice 1 tsp. lemon Zest (about 4 lemons worth of juice)

  1. preheat the oven to 400
  2. cut each pastry sheet into 6 rectangles. Lay the rectangles on 2 baking sheets and bake for 10-15 minutes. remove from the oven and flatten slightly. cool (I cut mine into 12 rectangles. It’s easier to handle and eat)
  3. whip the cream till soft peaks form, add lemon juice and lemon curd and 1 tsp. of zest. mix together gently. (if you made your own curd, do not add juice and zest)
  4. spread lemon cream on one rectangle…top with another rectangle and sprinkle powdered sugar on top. You can make this a double decker but they are harder to eat! 🙂

ALERT: Ohio doesn’t seem to carry lemon curd in the grocery stores.. or at least not Kroger or Walmart. BUT…. don’t fret! Its easy to make your own lemon curd.

  • Home made lemon curd:
  • 1 small package of cook and serve lemon pudding mix
  • 1/2 c. sugar
  • 12/ c. lemon juice and 1 tsp zest
  • 1 3/4 c. water
  • Cook, stirring constantly.. till mixture thickens and becomes more translucent. Store in the frig. till needed
