
I am branching out and finding some new cookies besides just the forever loved chocolate chip recipe located in this blog. I also have a new cook book find called Party in your plants by Tallia Pollock. I’ve tried a couple recipes so far and both have been great. I wanted to start with my favorite cookie which happens to be Oatmeal raisin so the recipe in this book called my name. It’s easy to throw together. I didn’t even mix the dry and wet separate and it still worked! I have a fabulous original oatmeal raisin that my Mom spiced up with a few more spices that I love so I want to tweak this recipe as well and see if I can get it even closer to my Mom’s recipe I grew up on. This recipe also uses Peanut butter (so does the chocolate chip recipe) and I think the peanut butter is a little more flavorful than I would like in this cookie so will try Almond butter next time. I will also add: 1/4 tsp. all spice and 1/4 tsp nutmeg. I routinely use craisins instead of plain raisins.
Preheat oven to 350…line your cookie sheet with parchment paper
In a mixing bowl”
1/3 c. peanut butter (almond butter or sunflower butter)
2 Tbl. pure maple syrup
1/4 c. unsweetened almond milk
1/2 tsp. pure vanilla extract
1/2 c. raisins ( craisins or maybe even some chocolate chips)
1/3 c. coconut sugar
1/8 tsp sea salt
1/4 tsp. baking soda
1/2 tsp. cinnamon (I added 1/4 tsp. all spice and 1/4 tsp nutmeg)
1 1/2 c. rolled oats (not the quick cooking ones!!)
1/2 c. almond flour
Mix all of this up thoroughly…Make a ball and place on the cookie sheet. press to flatten with the bottom of a wet mixing cup….Bake for 12 minutes… cool completely before removing. Store in airtight container. ( I freeze 1/2 of mine and pull them out as needed. )
