
The first time I had this dish was at my brother’s in Florida. I am new to ORZO and now realize how much I have been missing over the years. This is delicious!!!! My hint on this is to follow directions carefully. I made this with a friend and our salmon wasn’t ready so the orzo sat in the frying pan too long and lost the creaminess that it normally has. (talking and cooking can be challenging with a new recipe)
Boil: 8-10 minutes
2 c. water
1 c. Orzo
1/2 tsp. salt
Frying Pan… Saute’
1 clove garlic, minced
1/2 mediu red onion, chopped
1 TBL. olive oil
ADD: to the frying pan (cook until spinach is wilted)
3 oz. sun dried tomatoes, chopped small
1 TBL olive oil
1 TBL butter
1/2 tsp. pepper
1/2 tsp salt
2 c. chopped spinach
DRAIN ORZO:
ADD to the frying pan
SERVE:
Add 1/2 c. parm to this dish before serving
