
Really??? I have heard about and tried Kale chips 2 times before and PERFECT doesn’t come to mind. BUT… Angela Liddon has done it again and these are worth putting on your radar. I am going to include the recipe with this post. It’s easy and I think it’s a good thing to have on hand as we start the NEW YEAR. These chips are light and airy and so crisp they literally melt in your mouth like cotton candy. I made mine last night and had some left over so put them in an uncovered bowl and left them out on the counter. This morning, they are still every bit as crispy and delicious. I know there are many variations out there with Parm cheese being a great topper ,but I have to think that’s where the moisture would come in and you’d better eat the whole batch in one sitting. (With any sizeable group, this would be easy to accomplish!!) IF you want them hanging around for something to munch on or add to a sandwich plate, then stick to this recipe and only tweak the spices to your taste.
I thought it would take hours to dry them out and in reality, it took about 20 minutes. Set your oven to 300….line your baking sheet(s) with parchment paper then:
Using one bunch of Kale, use a knife to cut down the leaf edge to separate the leaf from the heavy stem. You can tear any larger leaves into smaller pieces if you’d like. Rinse well..use a salad spinner if you have one to get excess water off the leaves. I used paper towels to dry my leaves.
In a large bowl: place your dried leaves and add 1 TBL. of olive oil sprinkled over the top. Use you hands to massage the oil into the leaves. This is easy and it’s amazing that so little oil covers so many leaves so well. (this is a fun step for the little person in your life)
Spread the leaves out in an even layer on the baking sheet. Try not to overlap much. Sprinkle leaves with a mixture of: salt and pepper (1/2 tsp each) and 1/2 tsp of your favorite mixed seasoning..If this is a salt seasoning mix.. omit the salt from above. I used Johnny’s seasoning salt and pepper. If at all possible, put your mixture in something you can shake from so your distribution is light and even. (Garlic salt and pepper sound good to me and next time I will try this!! I also would love a little heat so would add some red pepper flakes next time. Know your crowd!)
Bake for 10 minutes… rotate the pan from front to back and bake 10-12 more minutes. Nibble right out of the oven!!! The recipe says you can dip them in ketchup or sriracha or a favorite salad dressing but to be honest, they were perfect right out of the oven.
Even if you have tried Kale chips in the past, this is worth one more try. It’s possible, you are not a Kale fan…that’s ok….we’ll find something else for you!!!!! š
