I had this recipe down in Florida for the first time and thought it was absolutely delicious!! We also have great big family gatherings and different kinds of bars: potato bar, taco bar, pasta bar, etc. and now have added a new component….FAJITA BAR!!! This is not only gorgeous to look at, but it’s easy and super healthy and appeals to most tastes. When I got home, my daughter sent me a new recipe and low and behold, it was the pan Fajitas but made with chicken. Perhaps you too have seen this recipe, but, just in case you haven’t, I’m adding it to my blog so we can all have it with the touch of a button. Fajitas are typically served in a warmed flour tortilla but you can serve them in a Gluten free warm tortilla or even a large lettuce leaf. To be honest, you could even just eat the insides of the fajitas served with tortilla chips on the side. I think this will be a regular meal at our house and, I hope in yours as well.
preheat oven to 425 and lightly oil a lined baking sheet
IN A SMALL BOWL: COMBINE…
2 tsp. chili powder
2 tsp cumin
2 tsp oregano
1 tsp paprika
1 1/4 tsp. sea salt
1/4 tsp. pepper
3 garlic cloves, minced
3 TBL. olive oil
TOSS WITH ABOVE:
1 1/2 lb of chicken (cut into thin strips) or 2 lbs. of shrimp
1 red bell pepper * all peppers are cut into thin strips
1 yellow bell pepper
1 orange bell pepper
1 onion (cut into wedges)
Bake 25 minutes or until the veggies are crisp
TOP WITH: cilantro and lime juice
Other toppings that can be added to the bar:
green onions
sour cream
shredded cheese
