SHRIMP, MANDARIN ORANGE, SPINACH, PASTA SALAD

This is a favorite family and company dish. It’s called a salad, but, I use it as a main dish. It’s beautiful to look at and tastes amazing AND it’s healthy! This can be made up 12 hours in advance and left overs last 2 days, IF you have any.

DRESSING

1/3 c.teriyaki sauce ( the thicker, the better)

1/3 c. rice wine vinegar ( may sub apple cider vinegar)

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/4 tsp. sea salt

1/4 tsp. black pepper

1 TBL. sugar

1/2 c. olive oil

SALAD INGREDIENTS

1-1 1/2 lbs of cooked shrimp

8 0z. bow tie pasta ( cooked according to the box)

4 c. chopped fresh spinach leaves

1/2 c. craisins

1/3 c. chopped raw cashews or pine nuts

1 4 oz. can of drained mandarin oranges

1/4 c. cilantro leaves or flat parsley leaves, chopped
