I am eating colors of the rainbow this week and my eyes settled on this hearty soup, AKA stew. Checking out the ingredients, I had everything I needed and I knew I liked everything in this stew. That’s how you start with a new recipe. Can I make this without a trip to the grocery and do I like all the ingredients. I also have to look at the spice level since my husband is a light weight. Spice is normally easy to tweak and can always be added individually, but can not be eliminated if you added all the spices from the get go. I did not use the Jalapeno pepper but I did use all the chili powder and cayenne pepper that was in the recipe and my stew is just perfect spice wise. I added a few pepper flakes and sriracha sauce to mine for dinner as I like a little more spice. I normally like to blend soups with an immersion blender but decided to leave this one with a more stew like quality. I’m glad I did! I can picture this dish with the fireplace glowing and a glass of red wine and a hearty bread to complete the meal. My husband liked this more as a side dish with chicken tenders and green salad and I’m pretty sure my grand children would not appreciate this as their dinner. It’s a grown-up stew with lots of flavor and textures that would be new to little ones. Perhaps too many changes at one time, but…… for the vegan, YOU ARE GONNA LOVE THIS!!! Each bite makes me happy!!!!
