
I was so ready for some noodles and living in a home with gluten issues is not helpful with the pasta dishes. Since spaghetti is my all time favorite food in the world, finding a way to find that comfort food is a must!! I have discovered spiralized Zucchini noodles as a conveyor of my favorite marinara sauces and welcome to my world: RICE NOODLES. I break up my rice noodles so they are easier to handle and eat. Use a large bowl. Break up the rice noodles and pour boiling water over the noodles to cover. Let this soak for 15-20 minutes and rinse with cold water. How easy is that to prepare the base for a delicious dish? I also used store bought sweet chili sauce so this is an easy dish to pull together and restaurant quality. BONUS!! Most sweet chili sauces have a little bit of kick so don’t add any more heat till you have your own portion on the plate. The noodles , shrimp , peppers and snow peas help with the heat and my husband can handle this dish easily so, no worries. I had a red wine started so used that in my picture but I think a cold glass of chardonnay would be absolute perfection. Enjoy!!!
Marinate (1-2 hours)
24 raw shrimp (peeled and deveined) (I used 2 pounds of large shrimp and cut them into chunks)
1/2 c. sweet chili sauce
1 package of rice noodles (soaked and rinsed) * I didn’t use about 1 c. of the prepared noodles because it looked like the noodles were going to overtake the recipe. Start with less and add noodles to the skillet till you like the distribution and combination of ingredients.
Skillet:
2 TBL olive oil
2 red peppers (chopped)
1 package of fresh snow peas (I like to trim the ends and slice long slivers…usually 2 slices per pod. Put the slivers into boiling water and let sit till you are ready to drain and add to skillet) *If you like softer slivers, you could boil these for a couple of minutes instead of just placing in hot water. I prefer the al dente since everything else is rather soft in this recipe. š
4-6 green onions (use the green and white parts) chopped
Cook the peppers and onions for 2-3 minutes. Add the shrimp and cook till translucent (about 4-5 minutes) Add the pea pods and noodles…toss to combine. Cover and simmer for 12-15 minutes to heat thoroughly. You can add more sauce if your noodles look dry or you just want more sauce.
