
Remember when Flank steak was cheap? AND THEN: they came up with some amazing recipes and the price rocketed. Pick out a nice FLANK STEAK and have the butcher put it thru the meat tenderizer 3 times. My MOM made her own stuffing but I actually really like stove top stuffing and this makes the recipe even easier to prepare. This dish is company worthy but easy enough to make for a family dinner. Your house will smell so good as this cooks and everyone will come to the table with appetites and smiles.
PREPARE FLANK STEAK:
spread Lowry’s garlic spread on the Flank. (I have also used butter with minced garlic when I don’t have Lowry’s on hand. I actually prefer it but it does add one more step. I can also use D.F butter although the Flank steak throws it out of the vegan category immediately)
SPREAD:
spread the prepared stove top stuffing onto the steak.
ROLL UP AND TIE AND ROLL IT IN FLOUR
IN A LARGE SKILLET:
Brown the floured roll in 2-3 Tbl. olive oil
ADD:
3 c. water
1 1/2 package of Lipton onion soup
COOK:
at a low heat for 3 hours.. You might have to add a little water during this 2 hours. I have done this in a crock pot BUT getting it out of a crock pot when it is done is nearly impossible. I prefer the skillet.
REMOVE THE ROLL AND THICKEN THE JUICE or just serve au juice
SLICE THE ROLL INTO 1/2-3/4 INCH ROUNDS AND SERVE WITH GRAVY AND RICE
