Here is another little twist on Flatbreads…Turkey meatballs. The meat on this flatbread could be any meatless product. For example: Vegetarian meat crumbles or Vegan sausage or even pan fried seasoned tofu. Flatbreads are a wonderful alternative to pizza. There is a Gluten Free Flatbread available as well. This might be a little harder to find and I will post some locations as soon as I find them. I am thinking Trader Joe’s and Whole Foods and even checking into amazon’s grocery. Stay tuned!!!! One other little hint: tomato paste comes in a tube so you can use just a tablespoon or two without wasting a whole can. Who knew??
What you will need:
1 green bell pepper
1 small yellow onion
8 oz. of pre-cooked turkey meatballs or other meat
2 flatbreads (They come in a package of 2)
3 TBL. Tomato paste
1 TBL. Italian seasoning
1/2 c. mozzarella cheese (or vegan Chao shreds)
Preheat the oven: 450
Slice the pepper and the onion into strips….Line a baking sheet with parchment paper and lay out the veggies… drizzle with olive oil and salt and pepper. roast for 8-10 minutes
SAUCE:
1 tsp. Italian seasoning, 1/2 c. water, 2 TBL butter (plant based butter works well too!) and 1 tsp sugar. whisk in tomato paste and season with salt and pepper.
ASSEMBLE:
Slice meatballs into thirds….Lay flat breads on parchment lined baking sheet, cover the flatbreads with 1/2 the sauce. toss the meatballs into the remaining sauce. Lay the meatballs on top of the flatbreads. Top the flatbreads with peppers and onions and sprinkle the mozzarella. Bake for 8-10 minutes
Slice flatbreads into quarters and serve
