I just returned from a a trip to Switzerland that included a cruise from Basel to Amsterdam. IT WAS GLORIOUS!! I discovered a couple of things that I want to share because one thought is especially worth pondering. I didn’t see any heavy people on the streets of Zurich and Lucerne. I saw them eating wonderful looking sandwiches as they walked to where ever they were bound. I saw them eat fondue and another cheese dish that is delicious with melted cheese over potatoes or veggies. Chocolate and pastries abound in Switzerland. (and they like their wine and beer as much as we do!!!) My observation: they eat wonderful, yummy things but in much smaller proportions than we do here in the states and they walk everywhere!! Hmmmmmm…..
One of my favorite breakfasts, on this adventure, was a yogurt bar that was set up with all sorts of goodies to put in your yogurt. They didn’t have my dairy free yogurt available, but when Home..that’s what I use and it’s still delicious! One of the items was small rolled oats, similar to our quick oats. I started with about 1 tsp. of oats because I didn’t think they would soften up in just a few minutes. By the end o the week, I was adding 3-4 tsp. of oats per 1/2 cup of yogurt. This breakfast was filling, different, yummy and most important, kept me away from all the pastries available without feeling deprived. My goal when I got home was to find a similar recipe and share it. One little side note: the cruise ship chopped all the fruits into tiny pieces instead of bigger chunks. I think the flavors of the fruit popped out with every bite and I now am chopping my fruit smaller…except for the garnish fruit of course. Enjoy!!!!!
2 medium apples chopped small. (I left the skin on)
1 cup Gluten free oats
1 cup almond or coconut yogurt
2 TBL. raw pepita seeds
2 TBL. raisins
2 TBL. dried cranberries
2 TBL. pure maple syrup
2 TBL. chopped walnuts or pecans
1 TBL. sunflower seeds
ADD chopped fresh seasonal fruit when serving.. THIS WILL STORE IN THE FRIG FOR 4-5 DAYS. This makes it a wonderful option for the work week easy grab. 🙂
