WHY SHOULD WE EAT SWEET POTATOES?

So many of my recipes for vegan nutrition contain sweet potatoes and I wondered why, so did some research. They are so rich in nutrients and those nutrients are imperative to our health. Even if we don’t memorize the chart for what food contains what nutrient, what if we learned what foods we should be eating more of because our health indicates we may be low on that nutrient? Hmmmm … Food for thought….

Sweet potatoes are very high in Vitamin A, Vitamin B5 and Vitamin E.. They are also high in magnesium and potassium (especially the purple skinned sweet potato..Did you know there were other colors of sweet potatoes besides orange??? ) Let’s break this down a little and if you see yourself on the sidelines, perhaps eating more sweet potatoes is in your future. (I have lots of recipes that include sweet potatoes besides just baking them. I did not used to like sweet potatoes. Something about that texture was a turn off. Camouflaging the little darlings might be helpful)

Vitamin A:

helps fight off and be more resistant to infections and infectious diseases. (Hello Covid 19)

helps with DRY EYES

Vitamin B5 :

Anti-inflammatory…prevention and reduction of chronic inflammation

Anti- diabetic (helps manage Diabetes. much slower release of sugar into the blood stream than most starches.

Magnesium and Potassium help manage stress levels which can help reduce insomnia. Help with gut health and regulate blood pressure. The purple sweet potato enhances memory.

Vitamin E:

improves hair and skin
