WINTER CITRUS SALAD

This says winter salad and the reason it says winter is all citrus is not available in the summer. I learned this the hard way. What do you mean I can’t find a grapefruit or a blood orange? However, not to worry. This recipe works beautifully with just navel oranges. I had an entre that included many veggies so didn’t want a green salad. Veggie overload! This citrus salad is beautiful to look at, totally different and delicious! My hint is in the preparation of the fruit. You don’t want the tougher texture of the white membrane or skin between the segments of your fruit. so, cut off the outer skin and across the top and bottom of the fruit. Cut the fruit in half from top to bottom. Slide your sharp knife just under the thin membrane to expose the fruit and scrape it off into your bowl. This process takes a little time but is worth every second. I used an immersion blender, in a tall cylinder, to blend the sugar and mint. Everyone enjoyed this salad and I will be making it again..Summer..Winter…Fall and Spring…YUM!!!
