GLOWING STRAWBERRY-MANGO GUACAMOLE P.81

DING DING DING…………………..WE HAVE A WINNER!!!!!!!

I took this appetizer to a gathering of vegan, non –vegan, adventuresome and “I’m only eating chicken nuggets” conglomerate. I came home with nothing. DELICIOUS!!!!!

       Learned about rinsing onion to wash off sulfurous compounds which helps make the raw onion more pleasant.  This was easy to prepare and beautiful to display. Be sure to chop your cilantro very fine so flavors blend and nothing over powers.  My son-in-law really liked the fruit as opposed to veggies for an appetizer. A nice change of pace.

     I used more fresh lime juice (2 TBL.)  as I roughly mashed and chopped my avocado before adding to fruit mixture.

Serve this with corn tortilla chips or quinoa chips.

As far as my rubric for this recipe, it’s a gold star across the board.  Easy ingredients, fast and easy to prepare, everyone liked it and the dish was empty so can’t tell you about left overs. Because of the avocado, it’s better if it’s all eaten at the same sitting.
